Smokey Corn Chowder

One of the things that I look forward to with the onslaught of fall and winter and cooler temps is the chance to eat soup and enjoy all of its warm, cozy goodness. Growing up this Smokey Corn Chowder recipe was one of my family's favorite go to recipes for camping and cold weather days. And although it won't do any favors for your hips except maybe make them more suitable for child-bearing, it will make you feel all warm and cozy inside. If ever there was a soup that felt like a nice warm hug, this soup would be it. Basically if you combine this soup with last month's Harvest Pumpkin Muffins, you've got everything you need for a warm winter meal that will put you into a cozy food coma and send you into hibernation. 

It only takes about 30 minutes to throw together and is simple, (which is pretty much a must for me when it comes to cooking) full of flavor, creamy, and pretty. It's perfect for a cozy family night in or for feeding a crowd. 

Smokey Corn Chowder


  • 1 c. chopped yellow onion
  • 1/2 c. butter
  • 1/2 c. flour
  • 2 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 8 c. milk
  • 2 (17 oz.) cans whole kernel corn drained
  • 2 pkgs. of little smoked sausages cut into thirds


Bring little sausages to a boil in a pot of water to remove excess oil and salt. Drain them and set aside. In a saucepan, saute onions in butter until brown. Stir in flour, salt, and pepper. Cook for 2 minutes. Add milk all at once. Bring to a boil stirring constantly until thick and bubbly, about 1 minute. Stir in corn and sausage. Reduce heat and simmer for 10 minutes.
