Growing up, Christmas Day was my absolute favorite day of the year. Not really because of the gifts, but because of how we spent the day. It was the most relaxing day of the year with absolutely no agenda beyond gifts and our traditional brunch, and I loved that. After gifts and brunch we'd spend the rest of the day in our pajamas watching the movies we'd gotten for Christmas and snacking. One of those snacks was my dad's pimento cheese. Even though it's super simple, it was pretty much a treat reserved only for Christmas time and that made it extra special. We usually enjoyed it with some fancy bread and crackers or celery and some Coke, you know the kind you drink, which was also a Christmas treat. To this day, I still like to make some around Christmas time to bring back a little bit of home

- 1 lb. extra sharp cheese
- 3/4-1 c. mayonaise
- 1 mall jar pimentos drained
- pepper to taste
Mix all of the ingredients together and let chill in the fridge for a little while to allow the flavors to set up. Serve with fancy breads and crackers and of course a glass of ice cold Coca Cola.
